Cacao Ginger Bites

I’ve taken to making little bite sized slices lately, rather than balls as I find it so much quicker, easier and way less mess! If you’re not into ginger or don’t have any on hand, improvise with something like goji berries, cranberries, walnuts or whatever takes your fancy! 

Here’s how:
Into food processor 1/2 cup almonds and 1/2 cup sunflower seeds. 
Blitz till still chunkish
Add:
1/2 cup rolled oats
1/2 cup cacao
2 TB chia seeds
Blitz some more till fine crumbs
Add:
1 tsp vanilla paste or pure essence
3 TB tahini
3 TB soft coconut oil
1 TB rice syrup (or sweetener of your choice like honey or maple syrup)
Mix well together. 
Then stir through 1/4 – 1/2 cup finely sliced ginger. 
Press into a slice tin, into the fridge till firm. Slice into small squares or the size you like. 

Options:

  • Roll into balls
  • Replace ginger with goji berries, cranberries, finely chopped apricots or nuts of your choice. A small handful of pistachios, walnuts of cashews.
  • Swap tahini with a nut butter like almond, peanut or cashew
