This is a versatile dip that you can also use as a spread, thin down further as a super healthy dressing, use as a sauce on veggies or veg noodles. Cannellini beans are a great inclusion in your diet, they’re high in protein and fiber without being packed with calories and great for stablising your blood sugar levels.

Gluten, dairy and nut free
Here’s how:
Put all of the following in nutri bullet or high speed food processor
1 tin drained and rinsed cannellini beans*
1/3 cup avocado or olive oil
2 cloves garlic peeled
very large bunch washed parsley
1/4 cup kombucha or water/lemon juice combo
Here’s how:
Put all of the following in nutri bullet or high speed food processor

Blitz together till smooth and creamy. You may need to add a little more liquid to get your desired consistency.
Keeps well in the fridge for a few days, great to spread on home made crackers or seedy bread for lunch with some tomato and cucumber.
* I’ve used butter beans or a tin of 4 bean mix when I’ve been out of cannellini beans – play around and enjoy!
